Recipe for pasta salad chicken cashew nuts

What you need

2 cups rotini spirals

1 cup peas

2 cans of chicken breast pieces 10 ounces

1 can water chestnuts, 5 oz

½ small red pepper, chopped

½ cup shredded carrots

½ cup red onion

2 / 3 cup mayonnaise

1 / 3 cup brown sugar

1 tablespoon cider vinegar

½ teaspoon salt

½ cup roasted cashews, unsalted

Start preparing the chicken salad pasta as directed on package rotini pasta spirals. Finely chop the pea pods 1-inch pieces and add to pot of boiling pasta during the last 2 to 3 minutes of cooking noodles. After cooking, drain the liquid from pasta and noodles, pea pods.

While you cook the noodles you can empty the water from the chicken pieces and water chestnuts. Pour the contents after draining the liquid into a large bowl. Flake chicken pieces with a fork. Cut red peppers into 1-inch pieces, chop onion and shredded carrots in a bowl with other vegetables and chicken. Incorporate spirals rotini. Mix well.

Using a small bowl, add mayonnaise, brown sugar, cider vinegar and salt. Add this mixture to chicken mixture and mix well with vegetables and salad ingredients.

Place the salad in the refrigerator overnight to blend flavors blend to create a delicious chicken salad. Before serving fold in the toasted unsalted cashews.
